OK, I read through this entire thread and I have to say, I feel like way more of a beer snob than I thought I was after reading it. Let me preface this post by saying that I have some strong opinions on what/who makes good beer. That doesn't mean I'm right but I've been through several hundred beers and I like to think that my taste for the beers I preference is pretty well refined. Having said that let me share something that I think is leading alot of beer drinkers astray:
IPAs. Holy crap.... some college kids in the NW US figured out how easy they are to make and how virtually impossible they are to eff up and the marketing machine took over. Does that mean they're bad? Absolutely not! There are some phenomenal IPA's that have come about during the revolution, but the source of their popularity is cost effectiveness NOT superior taste and characteristics. You can literally turn any beer that you've screwed up into an IPA by shoveling hops and citrus into it and hiding the mistakes. Sometimes this results in happy accidents and sometimes it results in just another brick in the wall. All this is to say that I can't wait for the beer world to get over IPA's and realize that bitter does not equal good.
Now that that is out of the way let me get to the beers I actually enjoy the most. My list is primarily characterized by malty euro-style stouts and ales and alot of my availability/experience is based in the Colorado region of the US. So if you like beers with some personality, a little body and depth, and a rich/thick malty feel than this is the list for you, otherwise you may safely move along as this is not the list for you:

I don’t have a top 10. I do like the already mentioned Bells Two Hearted Ale. Real nice. The Russian River stuff is also great. Particularly fond of Pliny the Elder and the rare Pliny the Younger. But 99 times out of 10 I’m drinking a Sierra Nevada. Pale Ale is about as good as it gets. I do also like the Hazy Little Thing. I grew up in Chico, the home of Sierra Nevada, and Pale Ale tastes like home.

Collective Arts might no longer be a thing soon.
In 2021 they collaborated with Steam Whistle (brewery in Toronto) to brew a larger. However, due to this and the taxation rules around "microbreweries", they might have pushed themselves out of the microbrewery tax bracket. Ontario wants them to pay $489,000 in taxes now.
Microbreweries in Ontario can't brew more than 4.9m liters of beer annually. Collective Arts brewed 3.9m, however Steam Whistle brews over that 4.9m liters mark and collaborating with other breweries puts you into the whatever the higher of the 2 tax bracket is.
Raising interest rates and production costs, coupled with this bill might put Collective Arts under. God I hope this isn't it and Ontario can work something out. CA is about to celebrate their 10yr anniversary, and they've been expanding so well while keeping under that 3.9m Liter mark.
