If you have premier players at each position, which you do, I take one of each.

That's a tough one.
I'm leaning towards Eichel, Rantanen, Vas, but I would love to know how many of each position you start.

(No I don't have a hockey problem...)
If that's the case I almost want to lean Aho or EK over Eichel purely due to positional eligibility. Although with one goalie slot I could even be tempted to pass on Vas for one of the forward options.
Tough to really go wrong though.
Final answer sticks though: Eichel, Rantanen, Vas.

2 for 1 for Kucherov or mcdavid if possible.
This is tough. I wouldnt keep a goalie in a keep 3, 16 team league, start 1 goalie. The only goalie you could even make an argument for to me is the one you have but I still don't think I get there. There will just be tons of serviceable options at the draft.
The given for me:
Rantanen (winger and he doesn't have the huge name somehow but you can't argue with the production)
The easy cuts:
Vas (based solely on being a goalie and I'm not keeping one in your league)
Landeskog(I think this is more of a career year than a norm despite his amazing ranking)
Meier (Like him alot but he's just not in the tier of the other players you're considering at this time)
So I have to pick two from eichel, Aho, and karlsson.
I'm going Aho and Karlsson. Hope that Aho keeps his winger eligibility and Karlsson is still karlsson, just hope he comes back healthy next year.
Eichel is a really tough cut and for what it's worth I may not be able to do it myself if it were my team (easier to give the advise than make the final decision). I'd seriously try to move eichel plus one of the others for McDavid or Kucherov and make your decision a bit easier.
