I'm currently holding an awesome tandem of Holtby and Schneider, but can it be better by replacing Schneider with Murray? And if so, is it enough of an upgrade to pay a slight premium for?
The opposing GM has Bernier, Halak and Murray...ugly...so I believe the consistency and clear starter role of Schneider may be enticing to him.
Is this worth pursuing? Or am I better off standing pat?

I'd rather have Schneider, but if you're going for Murray, then yea, it should be Murray+, not Schneider+ as you've suggested.

This is a bit forward looking to, in theory, upgrade that last keeper. You need more than Murray back., and it should either be a piece that helps this year, and isn't keeper worthy, or upgrades another keeper, mayeb Sending Malkin or Hall back for someone with a better health record?
