My all time favorite cover has been mentioned already: Cash's version of "Hurt" is both haunting and sobering. F****ng awesome. Me is two more I really, really like:

And Metallica does a great version of an old Maritime folk song, "Whiskey in the Jar". First time I heard Metallica do it, I was shocked that they had even heard of it, but there it was.

For me, it is important that the cover is significantly different than the original. I don't appreciate it as much, when a band covers an original and it is very similar to that original. That why Hillary Duff's Our Lips are Sealed, is horrible (ok... That isn't the only reason it is horrible).
I was in my office once playing my playlist in the background, and Chris Cornell's version of Billie Jean came on. One of the women that I work with listened for a minute, and says "this is awesome. What is this song? I know it..." She recognized it, but couldn't place it.
