I like the order you have them right now
31 TEAMS keep all multi-cat (lot of them) dynasty
Offensive stats : Goals, Assist , PPP, PPTOI, SOG...
Defensive stats : PKTOI, BLKS, TakeAway, Giveaway...
    (basically best NHL player)

Imo for defensemen in points only (or heavily slanted towards points & related cats) it really comes down to whether they have a path to meaningful minutes - whether that is PP time (ideally) or top pair minutes

Dobson - Already getting PP1 time and is in the isle's top 4. He's competing with Pulock for PP time and even if he gets bumped to PP2 Islanders tend to spread out their talent between the two units. No up and coming prospect who is likely to challenge him either.
Seider - Competing with Hronek & Leddy for PP time but I think that he may be able to pull ahead as early as midway through the season. Probably less offensively inclines than the remaining two though. At the very least he has a clear path to being the Wing's top pair all situations guy.
Smith - Last year was great, but I think that the Hamilton signing significantly limits his upside. He can probably still make an impact between PP2 and 5v5 time though.

Bouchard - Behind both Barrie and Nurse for PP opportunities and Oiler's management has continually held him back. Consensus was that he could have been in the NHL running their PP2 as early as 2019, two years later and he's finally getting his first chance to being an NHL regular and its only on the 3rd pair in what looks to be heavily sheltered minutes if last year is any indication.
