What to offer for Matthews?
For the team in my signature, what would be fair for me to offer up to get Matthews?

First, why do you want him? Just because you are a fan or because you expect big things?
Second, does the owner have needs on his team.
Early in the season it is often hard to pry superstars away from owners who have just drafted and are all hyped for the upcoming season.
An offer from your team would either be Barkov + or B. Tkachuk straight up although in a roto league with your categories Brady will be very valuable, if he ever signs.

I thought about offering Kane from my team for him straight up just because I regretted passing on him. (Kane, Panarin and Matthews all fell to my pick),...but I doubt the guy would go for it.

What we consider "fair" and what he considers fair could be two different things. Generally speaking, when it comes to trading for key assets like a Matthews (or McDavid/Draisaitl, etc) the only way the other GM would trade them is if you overpay. This comes back to my first sentence here.
Without knowing the other teams roster (strengths and weaknesses), it's hard to formulate a trade offer but if it doesn't include Barkov + or Tkachuk + in it going from you, you're probably wasting your time. Just my two cents.
