You come across as an IT guy who thinks everything is super easy and everyone has a handle on basic technology.

Most people are not IT savvy - most people don't even have common sense - and most people don't have time to do all the little things you are suggesting. There are a lot of idiots out there in corporate world. Most people are busy or lazy and just want fast access to your contact info when they need it, at their fingertips.

Never assume people have common sense, basic human decency or have basic IT skills. As mentioned above - direct your communication strategy to the lowest common denominator.
Accept mediocracy and you will get back at best mediocracy. If your company wants to lower its standards then that's it's prerogative. But it comes with a lot more headaches and waste of time.

"most people don't even have common sense" - True, but most are willing to adapt/improve.
"and most people don't have time to do all the little things you are suggesting." Except my way actually saves time. Not to mention you don't have to scroll through (on mobile now) tens of (hopefully not doing hundreds of pages on mobile) signatures to reference an page in email.

For us, if the email chain is going to be significant, the other user is asked to remove their signature in all further responses (if they are attaching it for each reply).
