Anything is possible. As of right now their plan is to get everyone to 56 games.

In the likely event that the last two games between Calgary and Vancouver will be meaningless and not have any impact on the playoff picture, is it possible that these games simply won't be played?

For sure, I just don't see them delaying the playoffs to play two meaningless games between teams that are out of the playoff picture.
They don't need to postpone the playoffs. Just have those two play if there's no impact on playoffs. There's no fans in the building anyway. They can play afternoon regular season games on the weekdays while the rest play postseason night games.
I believe the current plan is for all teams to play all their games. The North division is going to be playing regular season games while the US divisions start playoff games. It’ll be a later start to the playoffs for the Canadian teams.
