I don't think your team looks old, definitely still competitive. I've bolded my obvious selections for your keepers:
F: Rust, Bjorkstrand, Pavelski, Wheeler, Guentzel, JT Miller, Jamie Benn, Trocheck, Dubois, Batherson, Malkin, Edler, Crosby
D: Edler, Letang, Romanov, Boqvist, Larsson, Byram
G: Hart, Oettinger, Demko

I would likely keep Trocheck after the season he is having.
Now the issue with my choices is that it leaves you super thin on D. I get wanting to keep Romanov but you can't let guys like Malkin/Trocheck go for nothing to do that. So I would focus on making trades to upgrade your D. Preferably 2-for-1 deals if possible.
Without me, it's only "aweso".
I've flipped most my team over, but yea crosby, malkin, wheeler is probably on the way out. even Benn... i might want to keep wheels is because he's playing with dubois, and he still is a multicat player.

Haha your team is not aging.. Look at your trio of goalies - i see some of the youngest studs at the position. Crosby and Wheeler are the only once that are aging but the are still great players. Btw I would keep Trocheck for sure. I have to explore the market for Malkin and some of the other guys and try to get the best possible returns. Theres a lot of potential on your team...just its not worth it losing some of the guys for nothing. Go make some trades.

Boqvist and possibly Byram should probably move up into keeper spots. Not sure Romanov is deserving.

Goalie:
I'd look to move Oettinger. It's a keep 12, and in a best case scenario he's starting for the Stars next year while the real starter is hurt. In a worst case scenario, he's their #3 goalie. He will have good value and utility in a year or two, but I'd cash in on him now, as keeping 3 G in a keep 12 isn't a good idea, unless they are all elite - and there normally aren't 3 truly elite goalies at once, as they rise & fall.
Keeping just 2 is enough.
Defense:
Letang is a keeper, and you have young options. I'd look to get a second good keeper here.
Forward:
Here's where 8 or so of your keepers should come from. Malkin, Crosby, etc could be guys to sell off for help elsewhere, but they are top 12 guys, so make sure to not simply get depth back.
