If I'm understanding right are goalie wins the highest scoring category in your league? You seem bit exposed there - instead of Gallagher does this manager have a goalie you could use to level up in the goalie department?
Another GM offer me Q. Hughes + Gallagher for my DeBrincat + Hronek.
I feel I'm gaining value here with Hughes in my roster since finding a cheap good Def is pretty tough while finding a good replacement for Gallagher shouldn't be too hard.
The thing is Debrincat is hot right now, not sure if I'm giving away a too good asset. Any thought on that ?

I wouldn't do it. Goals are valued high right after GW, you're losing the best player in the deal regardless if he's hot right now. Debrincat alone will put up more goals than Hughes and Gallagher combined this season.
I second tonychad that if you're gonna trade him away it should be to bolster your goalies

Goalies can score high indeed, but not as high as a decent forward. For instance, the top goalies right now are
Vasilevskiy: 68 pts
Grubauer with 52.5 pts
Except these 2, following goalies are pretty much around 40 pts.
Compared to them, top forwards are about 90pts, and decent ones (like J.T. Miller or Tkatchuks for instance) are around 60 pts.
The GM in question owns Grubauer (and Khudobin), so it might be something to target indeed, but in our "not-so-deep" pool there are still a bunch of decent forwards available (Schenn, Lindholm, Dubois, Wilson...).

Consider the games that Dallas have to play because of postponements and where you are in your standings. Khudobin might not be a bad consideration. You just need to ask yourself if Dallas are going to start putting up some wins again. They're due to play Chicago, Detroit, Nashville a lot this season.
You've also got Rask and Samsonov. Even if Samsonov gets majority starts you'll maybe suffer every 2-3 weeks when Boston play Washington thus limiting your goalie wins? Khudobin in a different division might be appealing.

That's indeed a good point. But in that case, it would be a totally different trade and I'm not sure I should give away DeBrincat in a deal between Samsonov & Khudobin.
Maybe something like Guentzel + Samsonov for his Khudobin + Gallagher ?
