I can see a clear argument for Ellis, but I wouldn't say its a slam dunk. 2019-2020 saw Ellis and Karlsson perform at about the same level (similar points per game, Karlsson with more ppp and Ellis with a better plus/minus). But the difference is that it represents Karlsson's worst statistical season and Ellis' best statistical season. So Ellis' best (thus far) is as good as Karlsson's worst (thus far).
Of course, if you believe this is a future trend, then Ellis will outperform Karlsson moving forward. But I'm not sure I'd take that bet.
I'd probably take the upside of Karlsson here in a non-cap league.

I would go with the upside of Karlsson personally.
Plus minus is to random each year for me for that to be the deciding factor.

He scored or been on pace to score 50 points each year in last 10....i think he has 3-4 years left of that and it depends on his health....

I would be trading Ellis for EK. I think EK has higher upside potential but the plus minus is a concern.
I offered Ellis and a 3rd for EK and a 5th. Other GM wasn’t super interested, so I’m not sure how much more I would want to sweeten the pot, or just keep Ellis

It all depends on your personal preference.
Karlsson has been trending down, but I also think the extended layoff will help him come back healthy for the first time in a couple years. I'm expecting him to have a big bounce back year. He has the higher ceiling by a mile, but it's a risk. I would bet won Karlsson being more valuable/productive next season, but a history of injuries makes me question his long term value.
Looking at your roster, I assume you are considering trading for Karlsson? I think he's a great buy-low candidate in a lot of leagues.
On the other hand, Ellis is as steady as they come. He won't win you a season, but he'll contribute across the board and is probably a safer bet over the next 3-5 years, in my opinion.
Personally, I would roll the dice Karlsson. But I don't think you can go wrong with Ellis either.

Erik Karlsson for me, and it's a pretty easy decision IMO.
