The three you're thinking about are probably the guys with the most career value remaining. If you're contending for a title, you may want to switch out Sorokin for one of the COL goalies. In your shoes, though, I think you're taking the correct 3.
I have tough decisions to make in the offseason and have quite a few goalies. Thinking of keeping Sorokin , Saros and Bob. Would you keep anyone else?(Grub,Francouz,Holtby).

I like the 3 you mentioned. Sorokin, Saros and Bob.
Sorokin (very good chance) he takes over at some point next season as the number 1. Especially with Varlamov's injury history.
Saros is the obvious choice when Rinne leaves.
Bob honestly is too good to think he's on a decline at this time.

Personally, I'd keep Sorokin, Grub & Francouz.
I'm not a fan of sporadic Bob. Dreidger is making him expendable already if he continues to falter.
I'm not a believer Saros is the heir apparent. I'd bet $$ Ingram overtakes him in the next two years. He was elite in the AHL last year. He's almost ready & more accepted NHL size - with the skill to match.
Handcuffing Colorado is a really intriguing option

By my math, you are cutting 9 out of your 39 players (37 + 2 on IR)
I'd look at this to see who your 9 cuts are, because I would want to keep the 3 you have in mind plus Grubauer, if goalies are as scarce as they seem to be with 6 on your roster.
