Just watching bruins v pens, on pastas goal, it goes off a penguins players stick and goes in, krug and marchand were the 2 assists but none were given, ovis 2nd v islanders yday, he shots off target, puck hit pulocks skate goes in and carlson was credited with an assist...is there a differnce between shot in off a stick or skate regards assists or no assists...both shots were off target but the different deflections caused a goal, seems odd that both goals arent therfore assisted...just ovis and not pasta?

The boxscore was updated to give both Marchand and Krug assists. Often on plays where there is less than clear passing the ref on the ice will only tell the score keeper the goal scorer and then the video review/stat correction people will go back and award assists after the fact. Goals get changed on occasion as well where a tip is or is not properly credited at first instance.

Generally the assists only reset after there's a clear change of possession. A deflection off any part of a player of the opposing team (including sticks and goalies) isn't a change of possession.
Of course errors are also made but often assists are added to goals after the fact (sometimes a day or days later). I'll give the nhl credit as I've noticed less of it this year. They seem to be getting it right more often than ever before on the same day.
As noted, krug/Marchand were credited with the assists and all is right in the world for now.

From the rule book: "An assist is awarded to the player or players (maximum two) who touches the puck prior to the goal scorer, provided no defender plays or possesses the puck in between." Going off a skate is clearly not possession. Going off a stick - there is at least some room for judgement.
