I am not sure why you say that. Greiss is the better half of that tandem for sure, but you know what you're going to get with Varly. His percentage numbers (GAA, SV%) are good this year. He is going to get more starts than a backup and fewer than a starter, but he is definitely serviceable as a goalie.
As for the original question, Binnington is one of the best goalies in the league. His percentage numbers are very similar to Varly's, but his starts and wins and much better. Your sig doesn't say how many Goalies you start nor whether you're league is a daily pick or a weekly pick. This makes a big difference since if you start 1 G and it is a weekly pick league, then trade probably doesn't make sense for you. If you start 3G, then the trade probably doesn't make sense for you since you will have to make up those missed starts.
If you start 2G and it is a daily pick league, then sort of need to know who is on the waiver wire and who you would drop to understand the trade's value. If Greiss is available on the WW/FA list, then I would probably reject the trade, drop your weakest skater and grab Greiss. He is a great add and will likely start 41+ games.

I say it because I would have no interest in holding half of a 1A/1B. It doesn't matter what kind of numbers Greiss or Varlamov put up, they've been alternating games in a 50/50 split. He's giving away a bona fide starter, and running a timeshare (Greiss), a goalie who has lost his role to the backup briefly already (Markstrom), and a full on backup (Khudobin).
If you can't get Greiss, I wouldn't go for it (unless goalie stats really don't matter).
