Jarry is the answer to both your questions, but I expect he will be in the AHL while Murray is healthy, with DeSmith playing the backup role.

DeSmith will be the current NHL backup, for spot starts when Murray needs a rest. Jarry will be starting in the AHL, and if Murray goes down with any kind of long-term injury he will likely assume the NHL starting gig - much like he did last season. Jarry has much higher upside, and has legit future starter potential.

DeSmith has been better than Jarry in each of the past 2 seasons while playing for the same teams. Is that just because he's older?
I know Jarry is the "golden boy" but he was drafted 5 years ago and has only had 1 decent pro season out of 3 and Desmith had better numbers than Jarry (in 16 less games) that year too.
