This is a tough one to call. I always play fantasy baseball with an emphasis on starting pitchers and giving up Darvish would be hard for me.
And my concern is can Judge keep producing for the full year, he is still fresh and hasn't competed in the majors for a full year April-September yet.
I think this is a fair deal for you, it just largely depends on the kind of league you are in and what position that you have depth at that you can trade and be better off.

I think I prefer Ramirez of the two, younger and has a better ERA and WHIP. So if it is a categories league or a roto league... then I prefer Ramirez.

I copied these in to compare what the two options would be if you took the trade versus if you didn't.
Its hard to judge in a 16 team league cause you are deep into the barrel of players.
I am nervous that if you trade away Darvish and another one of your pitchers goes down there will be not much on the waiver wires to replace.
But if you do trade away Darvish to stack your outfield, then you could just play the waivers and try getting solid pitching stats that way.
I would keep Darvish in this situation. Elite pitching is SO hard to come by and it's just a yearly league. Judge has been incredible but his high strikeout rate makes me think there has to be a downgrade coming. He can't be this good all season.
Dudes git a 0.449 OBP, he may strike out 29% of the time, but his 51BB:92K is a good ratio (5BB:9k roughly). Charlie Blackmon is a 5BB:14Ks roughly, but he doesn’t K a lot, but he doesn’t walk.
Judge isn’t going to slow down in plate-intimidation. He may not have as many HR because his pace is insane (58HR right now), but I don’t think looking at his 92Ks is a good way to suggest he’ll slowdown to a pace where he’s no longer that good.
If you do this trade, you GOTTA focus on winning hitting from now on. Your pitching may be only for total style categories (Ks, Wins, QS, Saves/Holds) and throw those average cats out the window (ERA, WHIP).
I’m split on what you should do.

I just mean, as you said, his pace is insane and while it's been a few months I don't see that as being sustainable for a whole season. He is Mike Trout level in terms of dominance right now and until I see it for a whole season, I'm not going to believe that it's possible.
I also just think good hitting is a lot easier to find and that is factoring in a lot.
