I have the 3rd overall pick and know that McDavid and Burns are going top 2. Who should I be selecting at 3??
My feeling is between Crosby and Kucherov... Slight edge to Kucherov for being the goal-scorer and the potential for Tavares/Stamkos to come to me in the 2nd round.
What strategy should I be going into this draft with?

Crosby. Guy has been the standard bearer for a long time and is coming off a Rocket Richard trophy.
Don't overthink it. It's a one-year league and there is no reason to expect a significant dip in his one year totals.

I slightly favor Kucherov in this format. Heck i'm considering Kucherov over Crosby in my regular points only pools where goals and assists are equal. Kucherov is younger and doesnt have the concussion history which bodes well for him. Don't think there is a wrong decision here but personally I would go with Kucherov and would feel happy about it.
Kane/Seguin,Eichel are all good choices after this
The only reason I'm thinking Kuch is because Goals are worth more in this league, and I believe he can be 45+ easily this year, I don't think Cros will have the goal-scoring season he did last year, and of course there are his concussion problems. I also feel there are a lack of good RW's and having the best one bodes well with me. As i mentioned earlier, guys like Tavares/Stamkos/Scheifele could be there in round 2/3.
Is this closer than people are implying? Or is Crosby the overwhelming favourite here? Is Eichel worth considering here?

I get your reasoning I'm just not sure I agree with it. If you were looking to grab a winger I'd prefer P. Kane to Kucherov. Kucherov is a great player but I'm not ready to put him in my top-5 or top-10 after 1 point per game season. Kane has 4 straight seasons over a point per game, I'm not worried about the loss of Panarin to Kane. The concussion risk is always there with Crosby but I think it's manageable. He's played 75+ games the last 4 seasons, given Crosby's superstar power I believe he's the last guy who will be taking any monster hits to the head going forward.
I'm still taking Crosby as high as I can get him in any one-year format.
