I can only start 1 goalie per week and I'm not really sure who to start since it's been a little rocky for my Gs.

I go with Gibson just because he's the best goalie on the best team there.

I don't think he will. They put Bernier in early in the season and he has played well. No reason to put added pressure on Gibson unless he has an easy night on his first game.
FWIW, I'd go with Hellebuyck. Winnipeg is putting them in but their goalies aren't stopping enough rubber at the moment. I was afraid that Hutch would have a solid game yesterday and start to heat up and get more starts than Helle, but thankfully for us owners, that was far from the case. One of these 2 will start to play at the level of their respective skills sooner than later; hopefully it will be Hellebuyck as he needs some solid performances to get the crease.
