Been offered josi and a first Rd pick (Which would be around 8th overall) for quick. I feel I'm pretty well set at d but josi is a stud defender. That being said then I lose out on a top tier goalie in quick. Thoughts?

That's an awesome G tandem to have. I know from experience, see sig. These are the top 2 goalies this year in my scoring format. Everyone in your league hates you for having both of them.
Your D corps is so good that you are planning to keep 3 already.
If you were getting a top 3 pick back this deal would be interesting, but the 8th pick isnt all that great in this draft, unless someone falls to you.
I would not want to leave the Quick-sized hole in my G position just to get another stud D that I dont really need. I would pass.

I am going to pass also. Your format doesn't actually favor defenseman unless I am reading your sig wrong. Seems like defense scoring is worth less than forwards and no hits or blks?

Sorry I should probably clear that up. The defensive scoring is better than forwards. Those points are in addition to the standard scoring.

because you are not thin on D it doesn't necessitate depleting one position to overload another. The D core you have now is more than sufficient and yes although Roman is elite you cannot break up your goalie pair which is best in league more than likely.

To be honest I'd be looking to trade one of your keeper forwards (as I see Giroux, Tavares, and Couture all as keeper-worthy, personally I'd trade Couture for the best bang for your buck) for a pick. You can only keep two of the three of them anyhow, and just like trading UFA's at the trade deadline, it's better to get some kind of asset instead of losing them entirely.
I think your three keeper D make sense given your settings (a 50 pt dman is essentially a 75 pt forward), you're in a good spot for G, and you've got an extra high-end forward. Flipping one of them for a high draft pick (late 1st/early 2nd should be attainable for any of the three) would put you in a better position to replace F production, and if you have a good draft I wouldn't doubt you making a solid run next season.
