Even with the inflated defenseman scoring, I'd make that deal.
Suter is all but assuredly going to slow his pace. He's good for 40-45 points while Kopitar is a virtual lock for 65-70 - even with the slow start. Ipso facto, I'd bank on getting a lot more production from Kopitar than you will from Suter in the remaining 60 games.
